Egg Free Banana Cake
2 CUPS OF FLOUR
1/2 CUP OF BUTTER
1/2 CUP OF SUGAR
2-3 MASHED BANANAS
2 TBS BOILING MILK
1 TSP BAKING POWDER
1 TSP BAKING SODA
Cream butter and sugar together and add mashed bananas.
Dissolve baking soda in the boiling milk. I usually pop the milk in a mug and microwave it for around 20-30secs. It should foam up when the soda is added. Add to the mixture stir through gently.
Add flour and baking powder and stir through. Pour into baking tray and bake for 20mins at 180C.
I also like to make them into muffins just watch the cook time as they aren’t as dense they won’t take as long to cook.
*TBS - Tablespoon
*TSP - Teaspoon
2 TBS LEMON JUICE
1/2 TSP VANILLA ESSENCE
3 CUPS OF ICING SUGAR
Combine the butter, lemon juice, vanilla and icing sugar then beat until light and fluffy. Add more sugar and lemon juice to adjust the consistency as needed. Wait till the cake has cooled before icing unless you want that bare naked cake look.
* I used half this recipe as I am not a big lover of too much icing sugar.
